Il faut sans doute \u00e9voquer cette \u00e9tape d\u2019humanisation, franchie quand celui qui n\u2019\u00e9tait encore qu\u2019<em>homo erectus<\/em>, voici pr\u00e8s de 2 millions d\u2019ann\u00e9es est devenu <em>homo coquus<\/em>, capable de faire cuire ses aliments\u00a0; ainsi fut puverte la voie \u00e0\u00a0 il passait ainsi de la simple activit\u00e9 nutritive, de cueillette, de chasse, de p\u00eache qui comme les grands singes l\u2019occupaient une grande partie de la journ\u00e9e aux repas partag\u00e9s gr\u00e2ce \u00e0 une alimentation plus comestible, gr\u00e2ce \u00e0 une meilleure conservation des pr\u00e9parations alimentaires. Les repas ont ainsi concentr\u00e9 une dimension nouvelle de la sociabilit\u00e9 humaine\u00a0: se r\u00e9unir certes pour se nourrir mais aussi pour go\u00fbter aux aliments, pour affiner le plaisir de manger, pour en parler ensemble, pour cultiver ces liens qui se cr\u00e9aient entre les repas, les \u00e9motions, la m\u00e9moire, le langage. Et c\u2019est tout naturellement que les \u00eatres humains ajout\u00e8rent aux repas familiaux ordinaires, les repas festifs, ceux des grands \u00e9v\u00e8nements familiaux, anniversaires, mariage, et ceux des f\u00eates collectives\u00a0: No\u00ebl et le Nouvel an sont de celles-l\u00e0. On sait aussi l\u2019importance dans toutes les religions de ces repas partag\u00e9s et les nombreux symboles auxquels ils renvoient. Les repas sont ainsi des facteurs de reliance et de fraternit\u00e9.<\/p><p>La gastronomie est aussi un\u00a0 chemin d\u2019acc\u00e8s \u00e0 la vuln\u00e9rabilit\u00e9, \u00e0 celles et \u00e0 ceux qui, pour des raisons m\u00e9dicales ou sociales (pr\u00e9carit\u00e9, vieillesse) ou les deux \u00e0 la fois pourraient \u00eatre exclus de ces moments de partage. La gastronomie invite \u00e0 la sollicitude, \u00e0 l\u2019attention \u00e0 Autrui, \u00e0 ouvrir de mille mani\u00e8res les c\u0153urs et les portes, \u00e0 inventer des lieux ou des moments ou des personnes lointaines, \u00e9trang\u00e8res, se rapprochent, se d\u00e9couvrent proches dans la joie de cette variante de la fraternit\u00e9 qu\u2019est la commensalit\u00e9. Dans les h\u00f4pitaux et les structures d\u2019accueil m\u00e9dico-sociales, les f\u00eates de fin d\u2019ann\u00e9e sont l\u2019occasion de repas dits am\u00e9lior\u00e9s qui veulent en quelque sorte d\u00e9passer leur fonction nutritive, celle des besoins biologiques fondamentaux pour mobiliser le go\u00fbt et les \u00e9motions qui accompagnent ces saveurs d\u2019autant plus pr\u00e9cieuses qu\u2019elles peuvent \u00eatre consid\u00e9r\u00e9es tout au long des jours comme secondaires par rapport aux besoins nutritifs calcul\u00e9s techniques en une myriade de param\u00e8tres comme l\u2019apport calorique, les segmentation protides, glucides, lipides, les vitamines, les oligo-\u00e9l\u00e9ments et que sais-je encore\u00a0! Mais dans la vie quotidienne certaines maisons de retraite que l\u2019on appelle en France des ehpad ont d\u00e9couvert ces \u00ab\u00a0bouch\u00e9es\u00a0\u00bb mises \u00e0 la disposition des personnes \u00e2g\u00e9es dont les repas, surtout celui du soir, sont avanc\u00e9s \u00e0 des horaires de fin d\u2019apr\u00e8s-midi et au cours desquels l\u2019alimentation des r\u00e9sidentes et des r\u00e9sidents peut se heurter \u00e0 des conduites d\u2019opposition des uns auxquels r\u00e9pondent des attitudes de persuasion et d\u2019injonction de personnels soucieux de bien faire mais ne sachant comment faire pour surmonter des refus qui les culpabilisent. Ces bouch\u00e9es inspir\u00e9es de la cuisine mol\u00e9culaire font exploser de nombreuses saveurs\u00a0: elles peuvent \u00eatre prises avec une fourchette ou avec les doigts et elles sont laiss\u00e9es \u00e0 disposition des personnes \u00e2g\u00e9es. Elles peuvent ainsi prendre et laisser fondre dans leur bouche des bouch\u00e9es de c\u00e9leri r\u00e9moulade, de p\u00e2t\u00e9 de campagne, d\u2019avocat surimi, de blanquette de veau, de brandade de poisson, de poules r\u00f4ti, de coquillettes, de champignons, de pizza, de yaourt, de pruneau, de tarte \u00e0 l\u2019abricot, de compote de fruits<a href=\"#_ftn1\" name=\"_ftnref1\"><sup>[1]<\/sup><\/a>. Outre la joie retrouv\u00e9e dans une autonomie respectueuse des d\u00e9sirs et des besoins de chacun, ces bouch\u00e9es am\u00e9liorent la sant\u00e9 des personnes d\u00e9nutries.<\/p><p>La gastronomie est aussi le chemin qui permet de retrouver le respect de l\u2019environnement. Le chef \u00e9toil\u00e9 Jo\u00ebl Robuchon disait que toute cuisine d\u00e9truit des vies v\u00e9g\u00e9tales ou animales qui deviennent des produits et ces produits doivent \u00eatre respect\u00e9s. Le Livre \u00ab\u00a0Le cerveau gastronome\u00a0\u00bb montre que les joies de la gastronomie peuvent aussi \u00eatre un\u00a0 chemin d\u2019humanisation qui transfigure des besoins archa\u00efques et font de l\u2019h\u00e9donisme un affect mobilisateur de l\u2019attention \u00e0 la Nature et de l\u2019alt\u00e9rit\u00e9.<\/p><p><a href=\"#_ftnref1\" name=\"_ftn1\">[1]<\/a> Il s\u2019agit de quelques \u2013unes des bouch\u00e9es propos\u00e9es \u00e0 l\u2019ehpad de de Notre Dame de Puyraveau.
